Another possibility is the one which is being ignored by people who 
wonder why Molly doesn't "just get a job" (as if it were that easy!)

Molly is a smart, sharp, energetic individual in a constricting role, 
like the winning bet in the Book V Dead Pool, Sirius. You think she's 
happy bossing her husband and kids because you never see her interact 
with anyone else. And why do you think she gained all that weight?
 
Molly needs a uniform and a truncheon and a bunch of recruits of some 
sort to terrorize.

You make her sound a bit like Umbridge. I have it. Molly for DADA
teacher. But then we'd know she wouldn't survive to Book 7, which I
don't think is likely--given her boggart, it'll be one of her loved
ones who dies. (I'm betting on Percy to win the Book 6 Dead Pool, to
steal your memorable phrase.)
