Oh, what fun!!
I'm betting on the Dementors making a return appearance, yes, but a
major threat coming from Nagini. As you said, too little has been
made of this creature which should be fascinating us all (or so I
think). Just what kind of snake IS Nagini? Why was Nagini's milk
able to sustain Voldy? What kinds of damage can she inflict? Where
is she now? Did Voldy feed Wormtail to her? Etc., etc.
Dragons seem a real likelihood...though for some reason I'm thinking
more of the grand finale in book 7.
Like Ginger, I think the Runespoor is a possibility, and like Star
Opal, I think the Lethifold is likely to make an appearance...though
not directly to *Harry*.
Others kind of interesting to consider include:
Augurey - I'm not sure why this "Irish Phoenix" intrigues me so, but
it does. Perhaps it's the greenish-black color [rather Slytherin-
sounding] and the fact that its cry used to be considered a
fortelling of death. So I don't think it'll *harm* Harry, but I
think it might appear.
Dugbog - *IF* one thinks there is a strong likelihood of another
basilisk appearing, then I think a wise counterpart for Voldy would
be the dugbog, since its favorite food is mandrake. Might increase
the odds of real mayhem if there isn't a suitable mandrake crop
about when the basilisk appears.
Nundu - It's not that I think this one is likely, but it's the
prospect of what it *could* do which is scary: "...arguably the
most dangerous [beast] in the world...whose breath causes disease
virulent enough to eliminate entire villages, it has never yet been
subdued by fewer than a hundred skilled wizards working together"
[FB, p. 31]. Again, this wouldn't necessarily be a book 6
appearance, nor an attack just on our hero, but I think it might
make an appearance.

Siriusly Snapey Susan...who'd like to issue a friendly reminder
that "cannon" refers to a rather large gun which shoots big metal
balls at one's enemies, while "canon" refers to a body of work, such
as JK Rowling's Harry Potter books.
