it is a prophecy not a definite future.  If it was a definite outcome then DD would not be worried about protecting Harry.  He sent Harry to the Dursley's because that would be the safest place for him.  DD realizes that Harry is the best chance of defeating Voldemort but knows that both Harry and Voldemort are at risk of others as well.  If Voldemort truly believes that only Harry could defeat him why is he scared of DD?  Why would he care that DD was at the MoM?  And why would Voldemort try and use DD feelings for Harry against him.  He was not trying to get to Harry but to DD at the end of OoP when he turned into the serpent.
