They needed skill to whip up their potion based products, but they
didn't need to actually be in Potions Class at the time.

Keep in mind, prior to NEWT level, the Twins certainly were in Potions
classes; it appears that ALL students take Potion up until the end of
fifth year. So the question is, did the Twins do well enough in OWL
Potions to get into Snape's NEWT Advanced Potions class. Given how
little emphasis they place on grades, I can't see how they could have
gotten grade-A (Outstanding) in potions.

So, I suspect that at NEWT level they are not in Potions Class. That
would make their three core NEWT classes Transfiguration, Charms, and
DADA. 

Regardless of the grades/marks in classroom Potions, it is clear that
the Twins are very skilled in the area of Applied potions.

Perhaps this is contributing to the element of confusion. I am
assuming the Twins EACH got three OWLs. I extend that to assuming they
are each taking three NEWT level classes. Based on their skill, I
would have assumed Tranfiguration, Charms, and Potions. 

However, if they are indeed taking three classes, then that can't be
right because they are taking DADA. So if I have to eliminate one of
my original three guesses, it would be potions. That leaves the Twins
with NEWT Level Transfiguration, Charms, and DADA. 

That was the thinking process I used to reach my conclusion. I admit
there is a lot of 'if...then' speculation to it.

Does anyone remember the Twins specifically mentioning a class other
than DADA in the latest book?

Just a thought.
