Just wanted to point out that emeralds for Slytherin hourglass isn't
speculation, it's correct and mentioned once in OotP.
I'm at work at the moment so I can't give any page number, but I'm
quite certain of it since I came across it a couple of days ago
during a reread. It's mentioned when HP discovers that Draco (as a
member of the Inquisitorial Squad) was given the right to take House
points from fellow students: he sees stones going up the Gryffindor
hourglass while the Slytherin hourglass gets fuller and fuller of
emeralds.
As for the Hufflepuff stones, my first thought would be topaz, like
some others mentioned.
