I don't think she ever outright said Hermione was the
youngest.

People assumed it, since JKR approved the dvd timeline (CoS
dvd, I think) and thought she realized the implications
regarding Hermione's age.

Looking at her frequent trouble with numbers, it's not
too surprising to find out Hermione is really the oldest.
