There's not much to go on, but considering that his animal was 
the stag, perhaps James hated the Dark Arts because, deep 
down,  he was afraid of them. And since Gryffindors aren't 
supposed to be afraid of anything, it made him ashamed, and he 
took it out on Snape. That's my theory, anyway.
