Questions about Pensieves

Just one thing: It sounds logical that once a person has put his 
thought into the pensieve, he is unable to "think it" in his head 
till he has replaced it again. But I think you're wrong that Snape 
didn't know what memory Harry had seen, on the simple grounds that 
Snape himself dived into that particular memory to retrieve Harry. 
I'm sure he noticed which memory he and Harry was in... Snape is 
usually a very acute observer :-)
