If you remove a memory and put it into a Pensieve, afterwards you
shouldn't be able to know what that memory was about until you
either look into the pensieve or put the memory back into your
head. Otherwise what's the point in Snape taking out his worst
memory if he could still remember what it was about. That means
when Snape grabbed Harry and threw him out of his office, Snape
didn't know what the memory was of, just that he didn't want Harry
to see it.

Just one thing: It sounds logical that once a person has put his
thought into the pensieve, he is unable to "think it" in his head
till he has replaced it again. But I think you're wrong that Snape
didn't know what memory Harry had seen, on the simple grounds that
Snape himself dived into that particular memory to retrieve Harry.
I'm sure he noticed which memory he and Harry was in... Snape is
usually a very acute observer :-)
