All the protections in Harry Potter and the Sorcerer's Stone

I just finished reading Harry Potter and The Sorcerer's Stone for the 
3rd or 4th time and I was just thinking were all those protections 
really necessary ? I am mean Fluffy the Three headed dog, The Giant 
Chess set, The Flying Keys, The Potions riddle and the Troll and 
finally the Mirror Erised. Why did Dumbledore go through all that to 
protect the stone. Wouldn't the Fidelius Charm be a much better form 
of protection with Dumbledore himself being secret ?
