I prefer to think of "dragon heartstrings" as something peripheral, 
not literally attached to the heart.  As in, "Don't hold onto the 
Dragon's heartstrings too tightly or they can snap off."  :)  And I 
imagine that Hagrid's unicorns regularly shed their tail hairs in the 
forest and Hagrid collects them for Ollivander.  Or trades them in 
for fire whiskey.
