Actually, I *can* address the graveyard one. Recently Alfonso
Cuaron did an interview, in which he stated that he felt
they "needed something" in the space where the group would be
watching Buckbeak's execution/where Hermione punched Draco. He
suggested a graveyard, but JKR nixed it, saying that there was
actually a graveyard on the Hogwarts grounds, but in a different
spot, and that it would play in the series later. Which is why
Cuaron switched to a sundial there.
Cuaron was using this as an example of how she didn't "interfere"
just to be in control but that she has such a mastery of this whole
world that you have to respect her knowledge [paraphrasing].
