Actually, it DOES appear in text.  When Harry's looking at Snape's 
memory in the pensieve, he watches James call Lily "Evans" several 
times.

Of course, I'm still in agreement that some folks may be putting 
waaaaay too much emphasis on Mark Evans. ;-)
