It could just be the thrill of the moment for him. Even though he was going to kill her anyway, the time in between him killing Harry and her stepping aside (giving in to LV, obeying him, etc.), could have given him a few more minutes of a feeling of power. I think at that point LV was just getting hungrier for that feeling of power and obedience, so he'd have taken however many minutes of it he could get.
