Well, young Albus goes to Headmaster Dippit and says, "Please, I'd 
like to apply for the potionmaster position."
And Headmaster Dippet says, "Let's see how you get on with 
transfigurations first, shall we?"
(this really flies well if DD never gets to teach potions and Dippit 
is Snape's father and DD is taking it out on Snape now)

On another note, if your life span is 200 years or so, it seems you 
might hold several different types of jobs for different 
organizations.  Also, I think the real reason DD is at Hogwarts is 
because of the special magic it holds.

On a third note:  We've been told Snape was famous for dark arts, 
not potions.  Yet we know he is a powerful potions maker (per 
Lupin)  So I would think a very talented wizard would be put where 
his talents are most needed rather than where his preference lies.

But that is really an interesting thought. A lot more attention has 
been given to DD teaching transfigurations than to his earlier work. 
If DD is a talented potion maker, and so is Snape, what might they 
be cooking up together?
