My take on this is that men, unconsciously, are attracted to women 
who reminds them of their mothers. As you have said yourself, 
Hermione is plain looking, bookish and bossy. Kind of reminds me of 
Molly. From JKR's description of Molly, she seem plain looking too. 
She's bookish because it is impled that she had read all the works of 
Gilderoy and always consults books in her everyday chores. Very bossy 
too as we see how she tried to control all her children, even the 
adult ones, like Bill(constantly asking him to cut his hair) and the 
twins and of course her husband, Arthur(I remembered the scene in the 
hospital when Mr. Weasley was trying to hide the fact that he tried 
Muggle stitches for his wound). 

Vampire - who's curious if there are wizard dentists, Ron could be 
one and Hermione will see her Dad in Ron
