Lets compare the subjects at Hogwarts to the subjects at a normal
school (I'll take my typical "core" classes for example):
I took core classes of History, English, some type of Math and
Science. I also took electives and whatnot. Right? Okay, at
Hogwarts there are Potions, History of Magic, DADA and
Transfigurations, Herbology and for first years Flying, and
then "elective like courses" in the their third years as I have
always understood it, because Hermonie took Muggle Studies, while
Harry and Ron did not.
So, I think all of the core classes are important in building a
foundation of magic. Just like in a "real" school, if you are going
to become a Chemist, science would be more important to you, Or if
you are going to become an accountant, math might interest you, in
Hogwarts, if you want to become a certain profession, a certain
subject will interest you more, but all of them are equally
important.
As for one being harder than another, I don't think that is true.
For example, one could aruge that Transfiguration is harder than
DADA. However, Hermonie seems to be best at Trans., and of all the
subjects, has the most trouble with DADA. Harry, however, has
excellent skill in DADA, but has trouble with potions and is not as
good as Hermonie in Transfigurations. I think that every witch or
wizard has certain skills, and that is what they excel in. There
are hard spells or potions in every branch of magic.
Sorry, I seem to have rambled a bit. I also may have missed a
couple of subjects here or there...
