I thought Snape was speaking to the ceiling because his face 
was "floating" in the surface of the pensieve like a reflection, not 
because he was looking up at it instead of at Dumbledore.  His voice 
is "echoing slightly" so it makes sense that his physical appearance 
might also be off-kilter, and correct me if I'm wrong, but isn't the 
only time Harry sees everything in the pensieve as if he were there 
when he actually submerges his head in it?
