I think it means that Buckbeak didn't die because Harry and Hermione went back and saved him. They changed the time. If they hadn't ever gone back in time then Buckbeak would have died. So if they had changed anything else when they went back in time too much they might have lost themselves as because of the thing that was different they wouldn't have been able to get back in time to start with. Am I making sense?
