You're right, Dumbledore didn't (that we know of), but I think he would 
have.  Fond though he may be of Lupin, and excellent teacher that he is, 
this isn't about Lupin being known as a werewolf -- it's about the safety of 
the students, and Lupin has just proved himself unreliable.  He can't just 
keep giving Lupin chances until the one where he bites or kills a student, 
and *then* say "Okay, no more Mr. Nice Wizard!"
