Pippin:
Snape doesn't know the full contents of the prophecy. But he knows
that "The one with the power to vanquish the Dark Lord approaches.
..Born to those who have thrice defied him, born as the seventh
month dies...." because he heard Trelawney say those words.
And he knows whom Voldemort believes the One to be "you have
no idea of the remorse Professor Snape felt when he realized how
Voldemort interpreted the prophecy."  [HBP-US p 549]

I think part of Snape's cover is to behave as though he thinks 
Voldemort was mistaken and there really is nothing special or
important about Harry. Hence the constant sneering.
