But I believe that neither Harry nor Hermione realize that Snape is
under UV. How can they know that?

Even an old and waning Dumbledore is a powerful asset. He stood up to
Voldemort, defeated a whole bunch of aurors, has an entire lifetime of
magical experience. He has superb organizational skills, and motivates
the order as well as Wizardom. By losing him the Order and anti
Voldemort forces have lost a lot.
