JKR, herself, says on her site something to the effect of....
Harry could not see the thestrals at the end of GOF because it takes
time to register that you have witnessed death and only someone who
understands the ramifications of what they have seen can see them.
She also says that she has always known that the thestrals were
pulling the coaches but felt it would be strange for them to be
introduced at the end of the book without Harry, and us, being able
to find out about them until the next school year.
