That's the question that plagues me. One of the
biggest obstacles on the way to fully accept the Grand
Dumbledore Plan theory. What can Snape offer from his
position of Voldie's golden boy in book 7?
Assuming that book 7 will be a quest, ending in the
final duel, Snape can be useful in two ways:
1. As a punching bag for Harry to perfect his duelling
technique with a Legilimens. He will turn up on
Harry's path from time to time. When Harry finally
manages to kill him, he'll be ready to face Voldemort.
That's just too horrible to contemplate.
2. During the last stand-off, he can either push
Voldemort's hand, or take the curse intended for
Harry.
Both too obvious. Then again, JKR set us up to expect
a quest. She can surprise as again, because book 6 was
not full of strategic order meetings and full-scale
war operations everyone expected after book 5.
