Because it was Snape's, not Voldemort's. Not to mention the book 
might not seem 'worthy' to Voldemort.  Voldemort's ego would not 
accept the use of some schoolbook that was not even his.  He 
might not even know it exists unless he was teaching at Hogwarts, 
which he never was allowed to.  How would he have gotten it from Hogwarts anyways?
