Allie:

I can imagine some panic setting in when DDM!Snape turns around and 
Greyback is on top of Harry.  Snape's a veteran spy, but before 
this, has he ever seen any battle action?  I can't recall anything 
in canon.  Maybe he just didn't have the presence of mind to cast it 
nonverbally.  Maybe the TOTALUS was louder than the Petrificus.  I 
can believe Tonks would confuse "it's over" for "Totalus."  
Especially since she wasn't paying attention to it.  As for Harry 
recognizing the voice, well, he was a little preoccupied, and he 
didn't recognize "REMEMBER MY LAST" either.
