Memorial Day is the last Monday in May; Labor Day is the first Monday in  
September.  While I'd LOVE for it to be the former (hey, even a couple of  months 
earlier is great!), I agree that this has never been a consideration for  
Rowling's publishers.  
 
Personally, I lean toward the 7 July 07 date - with her comments on the  
magical nature of 7 (7 is the number of the Mystic, in numerology), to have the  
7th book published on 7-7-07 would just fit.
