Very good call, it's pretty much ironclad that anything new that 
appears in one book will appear again with more significance in later 
books.  Dobby (who led us to Winky), Polyjuice Potion, giants, Fawkes 
and on and on...  I was wondering about thestrals myself ("hmm, will 
we see these again?") while perusing OoTP.
