Only a small part of a memory was seen. One cannot say that Snape's mother did not cast some kind of spell on her husband later on. Also, the memory is from Snape's view point. He may have not seen his mother cast her spell at his father. So I do not see this as a mistake at all since we are only seeing a clip of what had happen.
