My take on it.

Maybe, Snape draws the line at harming innocent children? Yeah, he
might seem to hate kids, but why would he keep saving Harry? Why save
Draco?

Maybe Snape saw Voldemort as a coward when Voldemort decided to go after
the kids he felt would be a future danger to him, based on a profacy
from a batty witch who showed little tallent before. Why even take it
that seriously? Why not wait till the kids grew up?

Maybe Snape hated Voldemort all along and saw NOONE who could defeat
him, so either 'joined the winning side out of self preservation' or
being an oddball in school, joined because someone in the DEs made him
feel wanted. Note. Regulas Black died about the same time Snape
started teaching at Hoggswart. Regulas might have been a friend to
Snape or at least encouraged him, maybe planted seeds of doubt in Snape
about Voldemort and most likely had picked Snape's brain for how to deal
with poisons and such when RAB (Regulas Black, far as I am concerned)
decides to go after the Necklace Horcrux. Snape was not likely along
for the ride and felt RAB was killed before he ever found anything, so
never made the connection to warn Dumbledore to not bother with the
necklace. If Snape saw the note, I bet my bottom galleon he would know
and kick himself for not realizing that RAB likely died from going after
the necklace (poisoned) and Voldemort just took credit for killing him
to keep anyone from wondering what RAB was up to.

Also. Snape might have turned because Dumbledore offered him a chance
for real respect based on his tallent and not just 'being part of a gang
who didn't really care about him'. Maybe he wanted a real family as
much as Harry. Maybe Snape was forced by Voldemort to kill his parents
or his parents were killed by other DEs for being a mixed marrage?
