I've speculated on this in the group recently. My view is
that JKR is still well aware of her one hour limit on 
Polyjuice potion, but in an effort to keep her story compact
and moving forward, she simply didn't bother to add that 
detail to the story. In a sense, she eliminated all the
extraneous clutter to keep the story focused. 

I think we are intended to assume that detail is being 
managed off-page. That is, H/R/H are taking more that one
dose, but it distracts from the story to continually stop
and say so, consequently we are meant to assume it is
happening, even though it is never mentioned.
