We don't see that much of Sybill until OotP, but I think that the
sherry has been around for a long time. It might be part of the reason
that her character seems so vague all the time. In HBP she is explaining
to Harry that she had never heard a voice in the RoR "in all her years
of hiding-of using the room." So, I took it to mean that she has been
hiding her sherry bottles since she got to Hogwarts.
