Not to mention Potions which is shaky ground considering Dumbledore 
is gone and not even Dumbledore could secure the position with 
Slughorn the first time round without Harry. 

To get on to the dilemma at hand, I would have to say that Tonks 
would be next in line for transfiguration, given her talents. Dada, 
however, would be crucial since we are well aware of its downfall. 

Next in line for Headmaster would be even harder than DaDa to forcast!

And Head of Gryffindor may be harder yet!

Extremely interesting questions, makes you almost wonder if there 
would be a Hogwarts :)
