There are some names that are very difficult period to pronounce for a
non-native English speaker.  Hermoine's name is one of them.  English
is the hardest language to learn for a non-native speaker.   And sadly, many native English speakers have problems with their own language. So the fact that Viktor still had problems saying Hermoine's name after a full school term doesn't surprise me.

And since I just watched the movie, Hermoine does say a line in the
movie about that he watches her study when they are in the library. I
am pretty sure that there is a similar line in the book as well.

Everyone has different study skills and ways of obtaining knowledge.
Hermoine's learning style is intellectual meaning that she learns best
form books.  Viktor's learning style is more than likely psycho-motor
meaning he learns by doing.
