That would be a powerful scene. But the books aren't about Snape. If
it was Harry that spoon fed the poison to his supporter, to his
mentor, it would be just as powerful.
Instead of DD trusting Snape, the difference which places the focus
back on Harry, is that Harry trusted DD. Why would DD lie to Harry
about the potion? To get to the Horcrux. To get closer to
vanquishing the Dark Lord. Harry as the unwitting means to DD's
knowing and willing sacrifice still makes DD's death powerful,
especially at the hands of Harry.
