Check out the etymology of the word, "plumbing". It's a lot more ancient than you might realize. The problem was twofold; the first was that plumbing (as the name would imply) was originally lead pipes, which Muggles have found to be poisonous (and, according to some theories, helped to cause the fall of the Roman Empire). The second was that the need for plumbing is greater in cities, and, after the fall of Rome, many civilized places became ruralized.

Given the high school/college formula of just under an hour per class, it doesn't sound so bad. And there are a bunch of classes (and professors) that are not as well documented.
