  Things I think most likely to be left out:
   
  Why is The Bloody Barron the only one who can control Peeves?
  How did Salazar Slytherin create the COS without the other founder's knowledge?
  When did it become customary for each of the 4 houses to aquire their own ghosts, and how/why?   Where they the first 4 or did they have predecessors? 
  How did the ROR come to be, and whose idea was it? (Hmm... makes me wonder, did each of the 4 founders get to make their own "secret room"?  Could their be 2 more we have yet to discover??)
  How did a Giant Squid end up in a Lake?  
   
   
  Well that's all I can think of at the moment...although I know there are more.
