To me the most straightforeward reading of the quoted text is that yes, 
Dumbledore is guessing a list of possible unpleasant effects of the 
green goo. The blanket statement "or render me incapable in some other 
way" especially.

I do agree, though, that he is making no definitive statement about his 
lack of knowledge, hence my willingness to consider your theory. He is 
surely a master of concealing the truth without lying.
