My best guess is that JKR was in too much of a hurry to get Book 7 out. 
Regardless of how long she had it planned out, the Deathly Hallows 
APPEARED to have been shoehorned in. The horcruxes were all too easy to 
destroy, as well. I think had JKR given herself an extra 3 months or so, 
she would have paced the book much better, and made the endings far less 
confusing. A little less wilderness survival guide, perhaps an 
omniscient narrator look at Hogwarts in the middle of the book, with 
some foreshadowing of Snape's not being the bad guy (giving detention 
with Hagrid as punishment for rebels), and a better explanation of why 
Harry had to sacrifice himself in order to survive, and a clearer idea 
of the timeline would all have not been that difficult, and would have 
greatly improved the book.
