Yes, that would have been nice and satisfying for this reader, at least.
But, in the books, it didn't happen.
Whether one should regard JKR's post-series pronouncements as being
part of the story is up to each reader. But, for what it's worth, JKR was
asked about the lack of a portrait for Snape in the books. I'm going to
paragraphrase her answer, since I don't have the exact quote.
~"He didn't have a portrait in the office because he had abandonned his
post as Headmaster of Hogwarts. I'd like to think that Harry would have
tried to get him a portrait in time."~
