Eileen was a student of both Slughorn and Dumbledore.
Also, many of the notes in the Potions book may have come from Eileen
herself since the book was 50 years old. Mdm Pince saw the book and
hated scribbling in books. She didn't recognise her handwritting there
at the time.
As for being the granny, Eileen's mother would be 90 years old or
more ... hardly Filch's idea of a date unless he was very hard up to
find a witch (OK, Filch may have thought that way)
