One can always ship Umbridge or McGonagal to whatever one wants to
ship them. But in Umbridge's case it's probably best to ship her off to a location where she can ship with a Lethifold.

But on the other hand, did anyone write positive fanfic about Umbridge?
She isn't very pleasant to go by, but neither was Snape, and after the
tremendous performance of Imelda Staunton one would expect to see a few
fans coming out of lurkdom.
