I agree with most of your post, but I want to clarify something here.  
When Snape used the cutting curse on James (and I'm going to assume
that it's some form of Sectumsempra), he did so in a controlled manner--
even though he was quite upset.

When I say that Teen!Snape would have been horrified if he'd done 
what Harry did to Draco (as Harry was horrified), I mean that if he had
used the spell and it had produced the same result.  That is, if James
had suddenly started bleeding in a dozen different places and going into
shock.
