Oh, I just wanted to say the two incidents you describe are not without controversy.  I think the jar of cockroacher exploded in a burst of unintended magic fulled by Snape's justified but over the top wrath.  I don't think he knocked Harry's potion off his desk at all. (Not that it was fair of him to sneer at Harry either).
