I have a feeling it does not break the enchantments.

The only instance where I think we see the taboo in action is when 
the Snatchers capture Harry and the others and the canon suggests
otherwise:

"-demort's after the Elder Wand"
"The name's Taboo!" Ron bellowed, leaping to his feet as a loud crack 
sounded outside the tent. "I told you, Harry, I told you, we can't say it

it's how they find-"'

The implication is that the three of them have not put up the protection 
spells.
