He wanted to kill them for a variety of reasons. First they were members of the Order of the Phoenix, and were his sworn enemies. Further, they were the parents of the child that was supposedly the only real threat against Voldemort. And lastly, they stood between him and Harry. If he wanted to get to Harry, those who stood between them would have to die. 

The Half Blood Prince -

Well, he was a half-blood, witch mother, muggle father, and his mother's name was Prince (Eileen Prince). I think in his youth, he simply found the name a kind of interesting play on words.
