This is something that was explained in the special about Gollum on
the extended edition of "The Two Towers" as well: the actors did a
much better job when they were interacting with Andy Serkis and didn't
have to imagine a character that wasn't on the set. So they did all
the scenes with Serkis and replaced him with the cgi character later.
I was fairly sure they must have used a horse for the Buckbeak scenes
in PoA, at least for the riding scenes. Most of the rest could have
been made using a puppet IMO.
