Possible of course. But I don't think it would be as effective as the
Pensive.

Snape very carefully tells us that memories and thoughts are not neatly
filed away and it's pretty much chance which ones you end up seeing.
They could keep finding memory after memory of whatever it is that
pre-occupies kids of 15 months and under - "Hungry", "Wet" "Unhappy"
- all that fascinating stuff.

But if you do a brain-drain into the Pensive - ah! lots of benefits; you can
keep studying the same memory for as long as you like from different
angles for a start, not possible with Legilimancy, I think. And most 
important (and something I'm beginning to wonder happened) you can 
decide just how much to put back. Or maybe put blocks on certain memories.
