I usually lurk, but I felt like posting this time. I agree with those 
on the list who said that if the colour of his eyes was of some 
special importance, they would CG the colour in. But what you said, 
Richelle, made me think of something else. I think that maybe Lily 
had special eyes, not because of the colour, but because of her 
ability to perform magic with them (if that is possible), and Harry 
having his mother's eyes means that he inherited that ability as 
well, IMO. So to answer your questions, I would say that I don't 
believe that the colour matters at all, but I suppose there are 
people whose eyes have magical powers and Harry happens to be one of 
them. Maybe I'm way off base, but that's the explanation I could 
think of about why they didn't change Dan's eye colour in the
movie.
