Dumbledore is introducing Lupin to the student body, so  it would be proper 
to introduce him with a formal form of his name.  The writing on the bag is the 
tipoff that he goes by R.J. among those he does  not know well. The students 
are supposed to address him as "Professor Lupin"  anyway, so the fact that his 
first name is not clearly stated isn't that  unusual. Given his proclivities, 
Lupin is quite enough of a hint of his nature.  Including Remus right from 
the beginning would be really obvious! I don't recall  exactly when we knew his 
first name was Remus in the books.
