I must be missing something...several things,  probably.
 
I recall JKR clearly showing that Harry's Patronus as a stag  in POA. Why are 
people hoping he's going to have a Phoenix as his Patronus in  DH? Have I 
missed a canon reference somewhere that wizards have stables of  Patroni 
available to them? I kind of got the impression that a wizard's Patronus  was pretty 
individual--and maybe would change if the wizard had a life-changing  
experience, but until I read otherwise, I'm expecting Harry's to remain a stag. 
 
And as far as Ginny having a Phoenix as her Patronus--well,  why not? Does 
that mean it would be more powerful than Harry's stag, for  instance, and that 
she would be a more powerful wizard than Harry? I don't know  that it would 
definitely signify that.
 
Whether or not JKR had planned on giving Ginny a particular  Patronus, for a 
visual medium like the movies, it's not something that can be  glossed over. 
If the DA are to be shown practicing that spell, the film  makers will want to 
show one. I'm also sure she would have decide upon one for  Ginny, given the 
backstory she has given everyone, but even if she didn't, she'd  have to let 
the movie people come up with something. She had to have been  willing for 
Ginny to have a Phoenix as Patronus.
 
As for concerns that Ginny might turn into a powerful wizard  Mary!Sue!--just 
because she's a powerful wizard (which has clearly been  suggested by JKR in 
the books, so that's likely canon already), it doesn't mean  she'd end up a 
Mary!Sue! just because of the form of her Patronus. How powerful  she is we will 
learn in July, but it's already clear she's going to play a  big role in 
whatever happens, no matter what form her Patronus might  take.
